Calcium Propionate (CAS: 4075-81-4) is a safe food additive primarily used as a mold inhibitor and preservative. According to the Chinese national standard GB 1886.356-2022, it is produced through the neutralization, purification, and drying of propionic acid with calcium hydroxide (or calcium carbonate/calcium oxide). It appears as a white crystalline powder or granules with a faint characteristic odor (propionic acid smell) . It is hygroscopic in moist air, readily soluble in water, and slightly soluble in ethanol . As an acid-type preservative, its antimicrobial effectiveness is higher in lower pH environments. It inhibits molds, aerobic spore-forming bacteria, and Gram-negative bacteria but does not affect yeast activity, making it ideal for use in yeast-leavened products like bread and pastries . Functionally, it not only extends shelf life but also provides a source of calcium. It is widely used in bread, cakes, cheese, soy products, and wet flour products. Per GB 2760, the maximum usage level in bread and pastries is 2.5g/kg (as propionic acid) . In feed, it prevents spoilage and is heat-stable with low volatility .
