Application & Features

- High Purity Assurance: The 100% purity product contains 99%+ active ingredients, ensuring stable and reliable performance. High-purity SSL provides consistent emulsification and dough strengthening properties.
- Excellent Emulsifying Properties: As an anionic emulsifier, SSL effectively reduces oil-water interfacial tension, forming stable emulsion systems that prevent oil-water separation.
- Dough Strengthening: SSL undergoes electrostatic interactions with gluten proteins, enhancing the gluten network structure and improving dough elasticity and gas retention.
- Starch Retardation: Its linear molecular structure allows it to enter the helix of gelatinized starch, forming complexes with amylose that delay starch retrogradation.
- Good Solubility Characteristics: Insoluble in water but dispersible in hot water; soluble in hot oils, facilitating processing applications.
Usage Methods

- Direct Mixing: Mix SSL directly with dry ingredients such as flour for uniform distribution.
- Pre-dispersion Method: Add SSL to 6 times its weight of hot water or oil at approximately 60°C, stir until a paste forms, then mix with other ingredients.
- Blended Use: SSL is often used in combination with other emulsifiers such as monoglycerides and DATEM for synergistic effects.
Storage and Precautions

- Storage Conditions: Store sealed in a cool, dry, well-ventilated area; protect from rain and sunlight to prevent moisture absorption and caking.
- Shelf Life: 12-24 months unopened under proper storage conditions.
- Safety: Do not store or transport with flammable, explosive, or toxic substances.
- Compliant Use: Use in accordance with GB 2760 regulations, within permitted food categories and usage limits.
