Fumaric acid (CAS No. 110-17-8), also known as *trans*-butenedioic acid, is a safe food additive primarily used as an acidity regulator. According to the Chinese National Standard GB 25546-2010, *National Food Safety Standard — Food Additives: Fumaric Acid*, this product is a white crystalline powder or granular solid produced from maleic acid (*cis*-butenedioic acid) through a process involving isomerization, crystallization, and drying. It possesses a distinct acidic taste; it is slightly soluble in water and readily soluble in ethanol. As an acidity regulator, fumaric acid exhibits strong buffering properties, capable of maintaining aqueous solutions at a pH of approximately 3.0, thereby playing a significant role in inhibiting microbial growth and providing preservative effects. It is recognized as one of the strongest solid acids in terms of acidity; furthermore, due to its low hygroscopicity (moisture absorption rate), it helps extend the shelf life of powdered food products. In practical applications, fumaric acid is frequently used in combination with other acidulants (such as citric acid), typically at a dosage level equivalent to 20%–30% of the citric acid content. When utilized as the acidic component in the leavening systems of solid beverages, it contributes to the formation of long-lasting bubbles and results in a product with a fine, delicate texture. In terms of application, fumaric acid is widely used in gum-based confectionery, raw wet noodle products, bread, pastries, biscuits, baked goods, meat products, aquatic products, fruit and vegetable juice beverages, carbonated drinks, and various other food categories. According to the GB 2760-2024 standard, the maximum permissible usage level for fumaric acid is 3.0 g/kg in bread and pastries, 8.0 g/kg in gum-based confectionery, and 0.6 g/kg in raw wet noodle products. Additionally, fumaric acid is listed as an authorized food flavoring agent under my country's GB 2760 standard.
