Its properties are determined by the glucose equivalent (DE value) (DE value range is usually 3-20), the lower the DE value, the longer the molecular chain, the lower the sweetness.

Maltodextrin

Maltodextrin is also called water soluble dextrin or enzymatic dextrin. It is made of various kinds of starch as raw material, through enzymatic process of low-degree controlled hydrolysis conversion, purification and drying. Its raw materials are starch containing corn, rice and so on. Also can be refined starch, such as corn starch, wheat starch, tapioca starch and so on. The product with starch as raw material and controlled hydrolysis DE value below 20% is called maltodextrin, to distinguish the dextrin products generated by starch pyrolysis reaction. The main characters of maltodextrin are directly related to the hydrolysis rate. The DE value not only indicates the degree of hydrolysis, but also is an important index to grasp the product characteristics.
